Tater Tot Casserole

Instructions
- Step 1 Preheat your oven to 400 deg F and set the rack in the middle position.
- Step 2 In a large nonstick pan, melt the butter over high heat. Add the beef and onions and cook for 8 minutes until the beef is no longer pink and the onions are translucent.
- Step 3 Add the garlic and continue cooking for 1 minute.
- Step 4 Add the frozen vegetables and cook for 1-2 minutes until they are warm.
- Step 5 Add the condensed cream of mushroom soup, salt, and black pepper. Bring to a simmer then remove from the heat. Stir in 1 cup of the cheddar cheese.
- Step 6 Transfer the mixture to a 3qt casserole dish. Sprinkle the remaining cheese on top. Add the tater tots in a single layer on top. Bake for 45-50 minutes until the tater tots are browned and the sides are bubbly. Enjoy!

- 2 lbs ground beef
- 1 medium onion
- 1 tbsp butter
- 1 tbsp minced garlic
- 2 cups mixed frozen or canned vegetables
- 2 (10 ounce) cans condensed cream of mushroom soup
- 1 tsp salt
- 2 cups black pepper
- 1 tsp shredded cheddar cheese
- 24-32 ounces frozen tater tots (enough to fill the top of the casserole)
